Ingredients:
-2 Tbsp Vegetable oil
-1/4 tsp of spice
power (five spices)
-3tbsp minced Ginger
-1/2 tsp turmeric
-2 tsp cumin powder
-Salt to taste
-¾ cup chopped tomatoes
½ cup water
-250 gm cubed Potatoes
-1.25 cup of sweet
potato (peeled and cubed)
-2 cups of cauliflower
(cut into florets)
-1 cup green beans
(sliced)
-2 cups of eggplant
(cubed)
-3tbsp red chili paste
-1/4 cup of cooked
green peas,
-1/2 tsp garam masala

-Heat oil and add
sugar. Fry for few seconds. Lower heat
and add bay leaf and the five spices.
-Cook for few
seconds. Add ginger, turmeric, cumin and
Salt.
-Stir and add the
tomatoes and water. Add potatoes, Sweet potatoes and cover and simmer for 15
minutes. Add cauliflower, beans,
eggplant and red chili paste.

-Summer and cover for
10 minute. Reduce heat again and uncovers and simmer for a further 10
minutes. Sprinkle hot water over the
vegetables if they start to stick but be careful because you want sauce that
sticks to the vegetables.
-Stir in the peas and
simmer, covered until the vegetables are all cooked right through. Remove from heat and blend in the garam
masala.
