Apply cup cakes – Yummy apple delicacy

(It is really mouth water and easy to prepare, must try it)

Ingredients:
-1 cup whole wheat flour
-1 cup flour
-1 tsp baking power
-1 tsp baking soda
-1/4 tsp salt

Also taste: Coffee-chocolate cookies
-1 tsp cinnamon
-1/2 cup unsalted butter
-1/2 cup granulated sugar
-1/2 cup dark brown sugar
-1 egg highly beaten
-1cup yogurt
-2 large apples, peeled, cored and coarsely chopped.

Also taste: Phirni dessert
Recipe:
-Preheat oven to 450 F.  Grease and dust muffin cups and set aside
-Mix together flours, baking powder, baking soda, salt and cinnamon and set aside.
-In a separate bowl add the cream, butter, the granulated sugar and ¼ cup of the brown sugar.
Beat until fluffy.  Add the egg and mix well.

-Mix the buttermilk gently.  Stir in the dry ingredients and fold in the apple chunks.
-Divide the batter evenly among the prepared muffin cups, sprinkling the remaining ¼ cup brown sugar on top.  Bake for 10 minutes, turn the heat down to 400F and bake for an additional 5 to 8 minutes or until a toothpick inserted into the center of a muffin comes out clean.
-Cool the muffins for then turn them out onto a wire rack to cool completely.

Kheer in ‘Kulhad’ (earthen bowl)

(Kheer served in earthen bowl is more tasty and delicious)

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 6


Ingredients:
Milk – 1 litre
Sugar- 100 g
Samai Rice: 2tbsp
Mixed dry fruits: 1/2 cup
Sliced pistas Chios and a new rose petals for garnish
Ilaichi Powder: 1tsp
Earthen bowls (Kulhad) -6


Preparation:
-Wash with water and soak the earthen bowls.  Wash rice and soak in water.   Also soak dry fruits in water.
-Bring the Milk to boil in a pan.  Cook it till thickens a little.
-Add rice and cook on slow flame till the Kheer thickens.
-Add sugar and cook till it thickens stirring constantly to avoid burning.  Add dry fruits and -Ilaichi powder and remove from fire.

Baked Karanji – Dipawali special –Recipe

Every Indian festival is marked with distribution of sweets among the friends and relatives.  When you are planning a menu for coming festive season, here is one recipe special for the occasion of Diwali.  It is easy to prepare, delicious as well as healthy.

Ingredients:

For stuffing:
Split green gram skinless (Dhuli Moong dal), soaked overnight and then powdered in a mixture - 1.5 cups
Ghee 2 table spoons
Assorted nuts (almonds, cashew nuts, raisins) chopped – 4 tbsp.
Green Cardamom powder – 1tsp
Jawantri Jaifal -1/2 tsp
 For the cover:
Maida – 3 cups
Sooji – ½ cup
Ghee 6 table spoons
A generous pinch of Saffron
Khoya – ½ cup
Sugar -1 cup
Sooji -3 tbsp
 Recipe:
Preheat oven to 180 degrees C. Sieve Maida and Sooji in a bowl.  Add 5 tbsps ghee and knead into stiff dough using ½ cup milk.  To make stuffing, heat ghee in a pan, Add assorted nuts and raisins and sauté for 5 minutes, till it turns brown.
 Add powdered green gram, mix and sauté for 10 minutes.  Add Elichi powder, Jawantri Jaifal, Khoya Sugar and Sooji.  Mix well and cook for 10 minutes.  Remove from heat, transfer into a bowl and set aside to cool.  Divide dough into equal portions shaped into small rounds.  Roll out to make small puris. Put a small portion of the prepared stuffing in the center.  Apply little milk on the edges and put into a ‘gunijhiya’ maker.  Similarly make all the Karanjis.
 -Brush baking tray with little ghee and sprinkle some Maida and place Karanji s on it. Brush them with little ghee and bake in preheated oven for 30 minutes.  Turn the side after 15 minutes.
-Heat 3 tbsp milk in a small non-stick pan.  Add saffron and bring to boil.  Now remove from heat. Brush Karanjis with saffron milk just after you take out from oven.  Bake again for 15 minutes.
-A delicious sweet dish is ready.

Recipe: Fudgy Lollies

(These tasty lilies are fun to make and a delight to eat)

Ingredients:
2 tbsp chocolate chips
1/3 cup sugar
1 tbsp cocoa powder
1.25 cups whole milk

Pinch of sat
½ tsp vanilla essence
½ tbsp unsalted butter
Recipe:
-Melt the chocolate chips in a medium saucepan over very low heat stirring constantly until smooth.
-Stir in the sugar, cornstarch, cocoa powder, milk and salt and raise heat to medium.
-Cook mixture, stirring frequently until it thickens.  Remove from heat and add the vanilla essence and butter.  Stir until mixed properly.
-Set aside to cool slightly then pour into molds and freeze.

Recipe: Moong ki dal ka Halwa

(It’s generally a winter dish, in summers it will taste best when combined with a scoop of vanilla ice cream.)
Ingredients:

-3 cups of Yellow lentil (Moong dal)
-1 cup of sugar
-small cup of ghee
Cardamom splits (5 pieces)
-3 Cups of water
-1 cup of milk
-Finely chopped dry fruits.

Recipe:
-First of all soak Moong dal in water, preferably for 12 to 15 hours
-After that make a smooth paste out of dal in a processor.  Avoid using water.
-While the paste is ready, make sugar syrup by putting raw sugar into the water.  Heat the mixture to prepare the syrup.
- Now, put cardamom pods into it.
- Now, heat ghee or butter in a pan on a slow flame
- After the process is done, add dal paste and keep stirring it. Do it till it gets golden.
- Now, add milk or Khoya and cook it for some time.  In case you are using Khoya, cook for 4 minutes whereas with milk you need to wait till it becomes thick like a cream.
-Now put sugar syrup into the paste.
-Turn off the fire and add chopped nuts.  It is ready to serve.
-It will be fun to serve dal Halwa with Vanilla ice cream.

Pear Margarita-Recipe

Ingredients:

Ice 1 ounce repos ado tequila
1 ounce pear nectar or juice
1/2 ounce fresh lime juice
1 1/2 teaspoons fresh lemon juice
Method:
Fill a cocktail shaker with ice. Add all of the ingredients and shake well. Pour into a chilled margarita glass and serve.

Fruit yoghurt specially for Festive season - Recipe

(It is a useful healthy dish for who avoid high calorie dishes in festive season and look for tangible health benefits everything they consume)
 Ingredients:

- 400 gm Hung curd/yogurt
-100 gm condensed milk
-Canned chopped fruits like, Peach halves, apricots, prunes, cranberries.
 Recipe:
-Whisk the curd/yogurt with condensed milk
-Mix chopped fruits
-Portion into stemmed glasses for glass bowls.
-Keep the yogurt in the refrigerator to chill and relish the tasty fruit yogurt.

Recipe: Boondi Ladoo Cheese cake (The traditional Ladoo served on Ganesh Chaturthi with modern twist)

(Here is interesting recipe through which you can invoke Lord Ganesha)
Ingredients:
300 gm curd

200 gm cream cheese
Five Boondi ladoo
100 gm condensed milk
1 tbsp clear gelatin or agar-agar
½ cup+3tbsp of water
½ cup of sliced almonds and pistachios
Two digestive biscuits/marie crackers
2 tbsp melted butter
2 tbsp brown sugar (powdered)
Recipe:

Crush the cookies very finely.  Now mix melted butter, brown sugar and crushed cookies in a mixing bowl and put it in the bottom of the pan and flatten it with light pressure.  Heat about ½ cup of water.  Meanwhile, dissolve the agar-agar/gelatin in three tablespoon of water.  Pour this gelatin mixture in the ½ cup of water when it comes to boil.  Turn off heat and mix well.  Let it cool.  In a large mixture bowl bend hung curd, cream cheese and condensed milk.  Add the agar-agar after it is not cool and blend well with a hand mixer.  The mixture will be thick.  Now, pour this mixture over the crushed cookies in the baking pan. Cover and refrigerate for at least six hours or till serving time.  Just before serving, top this cheesecake with freshly crumbled Boondi ladoo’s and sliced almonds and pistas.

Recipe: Banana Chocolate Milkshake

Fruit smoothies and milk shakes are much savoured as they not only beat the heat but, are healthy too depending on the preparation.  Here’s the recipe:
Ingredients:
2 bananas crushed

1 and half glass chilled low fat milk
Honey (as per taste)
Hershey’s chocolate syrup ( as per taste)
Ice Cubes
Method:
In a blender, mix all above ingredients (except ice-cubes and ice-cream) and blend them at high speed.  Also, add more chocolate syrup if you want flavour and smell of chocolate to over-power this milkshake.
In Two glasses, place 2-3 ice cubes and 2-3 spoon of ice-cream (optional).  Now pour the milkshake in these glasses.
Finally, garnish the glasses with some chocolate syrup and serve.

Recipe: Apple cup cakes

(It is easy to make and scrumptious to eat)
Ingredients:
1 cup whole wheat flour
1 cup flour
1 tsp baking powder

1 tsp baking soda
¼ tsp salt
 1tsp cinnamon
½ cup unsalted butter, at room temperature
½ cup granulated sugar
½ cup dark brown sugar
1 large egg, lightly beaten
1 cup yogurt
2 large applies, peeled, cored, land coarsely chopped.
 Method:
Preheat the oven to 450 degree F.  Grease and dust muffin cups and set aside
Mix together the flours, baking powder, baking soda, salt and cinnamon, and set aside.
In a separate bowl add the cream, butter, the granulated sugar and ¼ cup of the brown sugar.   Beat until fluffy.  Add the egg and mix well.

Recipe: Fudgy Choco Bricks


(Here is an easy and quick recipe that doesn’t need backing and is tempting all the way)
Ingredients:
½ cup powdered sugar
100 g butter, melted

2 tbsp flour
¾ cup coco powder
400 g condensed milk
Walnuts, roughly chopped
Method:
1. Mix all the ingredients together in a pan and cook on a slow flame till the mixture starts to thicken and moves together
2. Stir in the walnuts and pour into a greased dish and smoothen the surface

3. Let it cool and it is ready to serve.

Recipe: Chocolate citrus tart.

Try out an easy to make chocolate citrus tart recipe at home that makes for an ideal dessert after dinner.
Ingredients:

½ cup butter softened
½ cup sugar
2 cups all purpose flour
2 tbsp unsweetened cocoa
For the citrus filling:
2 cups granulated sugar
4 large eggs
½ cup orange juice
¼ cup lemon juice
Grated peel of 2 oranges
3 tbsp all purpose flour
1 tsp baking powder
For the Chocolate frosting:
½ cup heavy or whipped cream
200 gm semi-sweet chocolate
 Method:
-Line the bottom of a spring form pan of 9 inches diameter with grease proof or other non-stick paper and grease the sides of the pan.
-Using an electric mixer, cream the softened butter and sugar.  Add flour and cocoa powder, and finally the egg.  Put in the fridge for a few hours or more.
-Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
-Using your fingers, pat down half of the tart dough into the bottom of the spring form pan (not the sides); keep the rest frozen until next time.
-Bake at 350 degrees for about 7 minutes.
-For the filling, mix sugar and egg for 2-3 minutes with an electric mixer.
-Add lemon juice, orange juice, grated orange peel, flour and baking powder and mix well.  Transfer to the spring form and bake at 250 deg F for about 30 to 40 minutes.  A wooden pick inserted in the center should come out clean.
-Using a knife, loosen carefully the cake from the sides of the spring form pan.  Let the tart cool to room temperature in the pan.
-For the chocolate frosting, heat the cream almost to a boil, add chopped chocolate, and stir until smooth.  Let it cool until it thickens.
-Spread the chocolate frosting evenly on top and sides of the tart.

Lauki (bottle gourd) Ka Halwa

Preparation time: 15 minutes
Cooking time: 45 minutes
Serves: 6
Ingredients:
6 cups grated bottle gourd (Lauki or Ghia)
1.5 cups milk
3 cups sugar
3/4 cup Desi ghee (clarified butter)
2 tbsp Raisins
2 tbs Magaz (Melon seeds)
Preparation:
-In a heavy bottom deep pan put the grated bottle gourd and milk to a boil.  Reduce the flame and cook till almost done. 
- Add the sugar and the ghee and cook further till he Ghee leaves the side of the pan
-During cooking continuous stirring is necessary to avoid burning.
-Add Cummins and Chirojee and mix well.
-Garnish with chopped cardamoms and serve hot or cold.

Recipe: Delicious Apple Pancakes

(It’s easy to prepare and delicious to eat)
Ingredients:

-½ cup plain flour
-1/2 cup corn flour
-3/4 cup milk
2 tbsp melted butter
Salt to taste
For the apple filing:
4 big apples, peeled and chopped into small cubes
2 tbsp butter
4 tbsp brown sugar
½ tbsp cinnamon powder
2 tbsp honey (optional)
Walnuts for garnish
Method:
For the pancakes – Mix flour, corn flour, milk, salt and ½ cup water making a batter.
 Drizzle a little butter in a non-stick pan and pour a small amount of batter (approximately 2 tbsp) in the pan.  Flip the pancake to the other side once golden-brown cooking both side. Prepare the rest the same way.
For the filling: Melt the butter in a pan and add apples, sugar and cinnamon powder. Cook till the apples are soft and well coated.
To serve: Spoon the apples filling on each pancake and drizzle some honey and walnuts on top. You can also serve with Vanilla ice-cream for some extra brownie points.

Recipe: Mango Banana Smoothie


Ingredients:
Chilled Mangoes -2 cups
Bananas – 2 pcs
Yoghut-1 cup
Ice Cubes – ½ cup
Vanilla-1tsp
Dash of cinnamon and nutmeg
 Method:

In a blender container combine Mango, Banana, yoghurt, Ice cubes, Vanilla, Cinnamon and nutmeg.  Blend until smooth.

Recipe: Delicious coconut balls.

(It’s easy and delicious and a healthy option when you are having those sweet tooth cravings)

Ingredients:
-500 fresh coconuts grated
-1 big can of condensed milk
Method:
-Keep about a cup of dry grated coconut aside
-Mix the remaining coconut with condensed milk till it is thick and you can give it the desired shape;
-Once the mixture is ready make into small balls and rolls the dry coconut you kept aside.

-Keep in the refrigerator for an hour and your coconut balls are ready to eat.

Mango Lasagne

Ingredients:

For Pasta dough:

Refined Flour-400 gm

Smolina-100 gm

Egg-4 pcs

Olive oil -50 ml

Salt to taste

Stuffing

Mango-1kgs

White sauce – 150 ml

Tomato sauce- 250 ml

Cream -30 ml and nutmeg a pinch

Method:

Pasta dough

Mix flour, semolina and salt together in a bowl.  Add egg and olive oil, mix well and make stiff dough.

Lasagne:

Make pasta sheet by using pasta machine into required thickness.  Cut pasta sheet into 12” and blench into boiling salt water and cool.  Grease the baking tray and place one layer of lasagna sheet on the bottom.  Spread mango topped with tomato sauce, grated cheese and pasta sheet arrange two more layers in same way.  Spread creamy white sauce on top and graed cheese and bake.  Serve hot.

Gulab Jamun: Recipe

(It is delicious sweet dish)
Preparation Time: 20 minutes
Cooking time: 30 minutes
Quantity: 16 pieces.
Ingredients:

Milk Fudge (Khoya) - 1.5 cup
Grated cottage cheese: 1/4 cup
Soda bicarbonate 1/4 tsp
Maida (Refined flour)-3 tbsp
Green Cardamom powder-1/4 tsp
Sugar-2 cups
Water-2 cups
Ghee or refined oil to fry
Preparation:
-Grate Khoya and mash cottage cheese.  Mix the two along with soda bicarbonate, refined flour, and green cardamom powder and knead well together to make soft dough
-Divide into sixteen equal portions and shape into balls.
-Prepare sugar syrup with sugar and two cups of water.  Clear the syrup by removing the scum, if any.
-Heat ghee/oil in a pan. The oil should be enough to immense the ball well. Deep fry all the balls and on low heat till golden brown in colour.  Drin and set aside for 3-4 minutes.  Soak in the hot sugar syrup for at least half an hour before serving.

Shahi Toast

(It tasty and quick to prepare dish)

The working hands before or after a hectic day at the workplace may not be in a mood to spend another hour at the kitchen and look for a dish which takes 10 to 15 minutes to be ready besides being tasty and nutritious.  ‘Shahi Toast’ may be the best choice.  It is tasty and easy to prepare. It can be served either for breakfast or as a dessert.

Ingredients:
-500 ml basundi
-4 Slices of bread
-Butter or ghee
Recipe:
-Deep fry the bread pieces in butter or ghee.  Dip in basundi.
-Garnish with sliced dry fruit and serve hot or cold.
