Recipe: Thai Style pork fried rice

Ingredients:
300g pork stir- fry strips
6-7 cups steamed medium grain rice
2 tbsp peanut oil
2 eggs, beaten

3 cloves garlic, cruse
1 onion chopped
2 ripe tomatoes, diced
3 spring onions, chopped
12 coriander leaves
Sauce:
3 tbsp fish sauce
1 tbsp soy sauce
2 tsp brown sugar
½ cup chicken stock
 Method:
-Wash and steam rice and then fluff up with a fork.  Mix all sauce ingredients together
-Heat wok or frying pan until hot.  Add a drizzle of oil and cook 2 thin omelets, remove and roughly chop, set aside.
-Stir-fry garlic until fragrant.  Stir-fry pork in 1-2 batches for about 1-2 minutes and remove
-Add a little oil, stir-fry onion for 30 secs. Add rice and stir-fry until hot.  Return pork.
-Mix and add sauce mixture. Add egg and heat through.  Sprinkle or mix through tomatoes, spring onions and coriander.
-Serve with cucumber, lime or lemon wedges and chili sauce.  Toss through some steamed green beans

Kalimirch (Black pepper) Chicken

(Less than 30 minutes chicken in creamy sauce flavored with black pepper)
Ingredients:
Chicken breast 500 g
Ginger paste 2 tbsp


Garlic paste 2 tbsp
Crushed pepper corns 3 tsp
Chopped coriander leaves -4tbsp
Cream 200 ml
Lemon juice 2tsp
Oil
Salt to taste

Also taste  Kerela Chicken curry
 
 Method: Cut the chicken breast into 1” dices. Marinate the pieces with the lemon juice, pepper corns, ginger paste and the garlic paste for 10-12 minutes.  Baste with oil and grill for 3-4 minutes. Turn and baste again and grill for 2 minutes.  Collect the dripping juices in a tray placed underneath. Put the chicken in a pan with the collected juices and the cream and cook for another 3-4 minutes.  Alternatively you could microwave the chicken with the cream for 3-4 minutes.  Remove and garnish with chopped coriander. Serve hot.

Recipe: Apple cup cakes

(It is easy to make and scrumptious to eat)
Ingredients:
1 cup whole wheat flour
1 cup flour
1 tsp baking powder

1 tsp baking soda
¼ tsp salt
 1tsp cinnamon
½ cup unsalted butter, at room temperature
½ cup granulated sugar
½ cup dark brown sugar
1 large egg, lightly beaten
1 cup yogurt
2 large applies, peeled, cored, land coarsely chopped.
 Method:
Preheat the oven to 450 degree F.  Grease and dust muffin cups and set aside
Mix together the flours, baking powder, baking soda, salt and cinnamon, and set aside.
In a separate bowl add the cream, butter, the granulated sugar and ¼ cup of the brown sugar.   Beat until fluffy.  Add the egg and mix well.
Mix in the butter milk gently. Stir in the dry ingredients and fold in the apple chunks.
Divide he batter evenly among the prepared muffin cups, sprinkling the remaining ¼ cup brown sugar on top.  Bake for 10 minutes, turn the heat down to 400 degree F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool the muffin for then turn them out onto a wire rack to cool completely.

Drinks recipe: Brazilian mix

Here’s a cocktail that you can dress up or keep simple.  The sexy Caipirinha from Brazil can liven up any party…So even if summer is all about the sun and the heat, the partying spirit won’t cool down.


Summer wouldn’t be summer without the citrus refreshment provided by Brazil’s Caipirinha.  This calls for lime juice and good rum as its base. The Caipirinha liquor of choice is the Cachaca, a distilled white sugar cane alcohol.  Originally considered a ‘poor man’s drink,’ today, the humble Cachaca is experiencing a much-lauded revival.

Get the ingredients together. You will need a lime; Cachaca; sugar to taste and ice cubes.
Method:
Cut the lime into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle, just enough t release the juice, otherwise it will get bitter.  Add the Cachaca and stir. Add ice and stir again.  It is delicious and potent.

Recipe: Fudgy Choco Bricks


(Here is an easy and quick recipe that doesn’t need backing and is tempting all the way)
Ingredients:
½ cup powdered sugar
100 g butter, melted

2 tbsp flour
¾ cup coco powder
400 g condensed milk
Walnuts, roughly chopped
Method:
1. Mix all the ingredients together in a pan and cook on a slow flame till the mixture starts to thicken and moves together
2. Stir in the walnuts and pour into a greased dish and smoothen the surface

3. Let it cool and it is ready to serve.

Chilli Cheese Toast –Recipe

(It’s a delicious snack for afternoon tea)
Ingredients:
-One bread load
-One Cup grated cheese

-Two green chillies thinly sliced.
-One Large onion, finely chopped
-Finely chopped coriander leaves
-Salt to taste
-Black pepper powder
Preparation:-
- In a bowl, mix cheese, chilies, onion, coriander leaves, salt and black pepper together.
-Take a slice of bread and spread a little cheese mixture
-Bake in a preheated oven at 175 C till cheese melts and the bread it toasted, approx 5-6 minutes.
-You can use cheese of your choice.

-Serve with Tea or Coffee.

Mango Margarita –Drink Recipe

(Perfect margarita for hot summers)
Ingredients:
Rice -1 cup

Lime -1
Silver Tequila- 3 ounces
Peeled small mango -1
Fresh lime juice-1.5 ounces
Chili powder-1 tsp
Orange liqueur-2 ounces
Grapefruit sod-3 ounces
Recipe:
-Spread chili powder in a dish, Moisten the rim of a margarita glass with the lime wedge and dip the rim in the chili powder to coat.
-In a blender, puree the mango and add the remaining ingredients and blend until smooth. 
-Pour into the glass and serve.
