Aloo Tikki- Recipe

(It’s easy to prepare delicious bite)
Ingredients:

Patatoes-1/2 kg
Bread crumbs
Green chilies (chopped)-4-5
Coriander leaves (chopped)
Cumin powder -1tsp
Salt to taste
Oil to fry
Recipe:
-Boil potatoes, peel and mash them.
-Mix with bread crumbs, green chilies, coriander leaves, Cumin powder and salt.
-Make a few balls from this mixture and flatten between palms.
-Shallow fry on hot oil on a griddle.

-Serve if Pudina and Coriander chutney or tomato sauce

Jeera Kaju Rice – Recipe

(Jeera rice is in itself a mouth-water dish but adding Cashew (Kaju) to it entirely changes its flavour.  Please try)
Ingredients:

Rice (Basmati) -2 cups
Ginger-Garlic paste-1tbsp
Tamarind (Imli) paste -1tbsp
Onion-1
Black salt (to taste)
Ghee/Butter or cooking oil, as per choice
Cashew nuts-100 gm
Cloves-2
Cardamom pods-2
Jeera-2Tbsp
Cashew nut paste-5tbsp
Preparation:
-Clean the rice soak in water. Wait for 20 minutes’
-Meanwhile heat oil/butter ghee in a different pan. Add Jeera to it and keep the gas on low flame.
-Add sliced onion and add tamarind, ginger and garlic paste, Keep frying for some time. Then add cashew paste.
-After it is done, add dry cloves and cardamom pods.  Fry it for a minute.  Also add salt in a quantity that it’s sufficient for the rice as well.
-Add water and mix it well.  Bring it to boil and then close the lid of the pan and wait for the water to dry.
-While the rice is being cooked take butter in a small pan and heat it.  Soon add cashew nuts to it and fry it.  Wait till it turns light golden.
-Take out the fully done rice in a bowl and garnish it with fried cashew nuts.

Making a perfect ‘Bhatura’

(Here’s the secret recipe to prepare perfect Bhautre)
Ingredients:

-Flour -2 cups
-Sooji-3tbsp
-Yogurt-4tbsp
-Olive oil-1tbsp
-Sugar-1/2 tsp
-Baking Powder-1tsp
Salt to taste
Oil for deep frying
Preparation:
-Combine all the ingredients together into soft dough.  The dough should not be too hard or too soft in touch
-Cover the dough with a wet cloth and keep aside for at least 3 to 4 hours.  Till it sets
-Make lemon sizes balls, put a little oil so it doesn’t stick and roll into thick round shaped rotis. Take care not to make rotis too thick or too thin.
-Heat enough oil for deep frying in a heavy bottomed Karhai.  Once the oil is heat, reduce flame to medium flame; slide the Bhatura into the hot oil.  Using the back of the ladle, press the center and along the edges and it will puff up.

Missi Roti –Recipe

Spicy Besan (Gram flour) bread, especially liked in winter season
Preparation time-15 minutes
Cooking time: 10-15 minutes
Serve- 15 Rotis
Ingredients:
2.25 Cups whole wheat flour (Wheat Atta)
2.25 Cups Besan
½ cups Yoghurt
1 tsp Carom (Ajwain) seeds
1 tsp Red chili powder
½ tsp cumin (Jeera) seeds
Salt to taste
2 tbsp ghee
Preparation:
-Mix all the ingredients except ghee in a large bowl. Knead the mixture with a little water at a
time into semi-soft dough.  Divide the dough into 15 equal parts and roll each out to a 4” diameter disc.
-Roast the disc on a hot griddle (tawa) evenly on both sides.  Now remove the griddle from the heat and roast the disc directly on the flame on both side till well done but not burnt. 
-Remove and repeat with all other discs.
-Smear 1tsp ghee on each disc and serve hot.
Note:  Finely chopped spinach or fenugreek leaves may also be added to the dough, to give colour and flavour to the Roti.

Recipe: Creamy white beans

(White beans cooked with chorizo and spinach)
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 2

Ingredients:
Onion 1 halved and sliced
Olive oil
Chorizo 50 g chopped into chunks
Chicken stock 200 ml
Cooked white beans -200g
Spinach -100g
Cream- 50ml
Salt to taste
Freshly grounded Black pepper to taste
Crusty bread to serve
Method:
-Clean the spinach. Wash well in running water and drain
-Cook the onion in 1 tbsp of oil until softened then add the chorizo and fry for a few minutes until it starts to give out its oil
-Add the chicken stock and simmer for a minute then add the beans and cook for 2-3 minutes until the spinach is wilted.  Add the cream and cook for 2-3 minutes

-Season with salt and pepper to taste.  Serve with crusty bread.
