Phalsa and Munjal Float

(Combination of two Hyderabad summer fruits, this drink will certainly cool you down on a hot day.)

Ingredients:

Juicy Phalsa — 0.5kg
Munjal fruit — 1 cup peeled and chopped
Sugar/Sweetener — to taste
Lemon juice — to taste
cumin seeds (optional) —
½ tsp roasted and crushed
A pinch of salt
A few Pudina leaves
Method:
- Pick and wash the Phalsa.
- Boil 5 cups of water and add the Phalsa to the boiling water and then switch the heat off.
- Allow the berries to cool.
- Crush the softened berries and pass them through a strainer to collect the juice.
- Adjust the taste, adding fresh lemon juice and sugar/sweetener as required. Add a pinch of salt and roasted and crushed cumin seeds
(optional).

Chill the juice:
In a tall glass, add the chopped Munjal and some crushed ice and top with the phalsa juice. Serve garnished with a mint leaf.
Note: You can substitute the Phalsa juice with tinned/bottled cranberry juice or apple juice.

Kashmiri Dum Aloo – Recipe

(This is a delicious dinner item loved by everyone)
Ingredients:
Potatoes – 900 gm

Water -3/4 cup
Salt to taste
Ghee or oil for deep frying
Ghee – 1 cup
Finely chopped onion-1 big
Tomato puree-4 tbsp
Curd-150 gm
Hot water-4 tbsp
Masala Power
Clovers-4
Bay leaves-4
Black peppercorns-6
Green cardmolms-4
Brown Cardmom-1
Cinnamon stick-1
Paste:
1- Chopped large onion
-Garlic
2 tbsp-Gingers
Black pepper corns
1-tsp poppy seeds
1-tbsp coriander seeds,
1-tsp cumin seeds
2-dry red chilies
1-tsp turmeric powder,
Ground mace, ground nutmeg
Preparation method:
-Scrape the potatoes, prick all over with a form and soak in the water with salt for a couple of hours.
-Dry the potatoes on a cloth and heat the ghee/oil.  Deep fry the potatoes until it becomes golden brown. Drain and set aside.
-Heat the ghee in a flameproof pan and fry onions with all the spices.  Grind the past ingredients to a fairly smooth paste and stir into the onions.  Cook for about 10 minutes, stir in the tomato puree, curd and salt. 
-Add the potatoes and hot water and stir over low heat for five minutes.
-Sprinkle the dum aloo with pepper and garam masala and cook for few minutes.
-Garnish with coriander leaves and the dish ready to serve

Watermelon smoothie- Recipe

(Simple and delicious smoothie)
Ingredients:

-Mango Jam Squeeze
-Two cups of seedless watermelon chunks
-1 tbsp honey
-fresh mint leaves
-1 Cup Yogurt
-Cinnamon
Preparation:
Take watermelon chunks, honey and mint in a food processor and blend.  Add yogurt and cinnamon and blend. Spread jam in a glass and pour smoothie with ice cube.

Pahaari Aloo Palda –Recipe

(It’s Himachali delicacy easy to prepare giving you mountainous pleasure at home)
Ingredients:
Boiled Potatoes-4
Curd/Yogurt-2 cups
Salt to taste

Turmeric-1/2 tsp
Mustard seeds-1/2 tsp
Mustard oil
Green chilies
Cumin or cumin powder
Preparation:
-Peel the potatoes nicely and cut them equally into large pieces
-In a pan heat mustard oil and put mustard seeds into it
-Add green chilies and cumin seeds or cumin powder. Stir well
-Beat yogurt or curd in a pan till it smoothes.
-After it smells mixed flavour of cumin, mustard, add potatoes to it. Stir it gently
-Now add yogurt or curd in the mixture.  Keep moving it clockwise for a while.
-Garnish with nicely cut coriander leaves and serve hot.

Chicken Stew

(It is quite simple to prepare and delicious)
Ingredients:
-One Potato,
One carrot
-One Capsicum
-One Onion

Also taste Mutton Stew

Also taste Chicken Pulao

-One Tomato
-One Kg. Chicken
-1/2 tbsp black pepper powder
-1 tbsp Olive oil
-Salt to taste.

 Preparation
-Cut all veggie in cubes
-Put one tbsp Olive oil in the Pressure Cooker, then add onion and fry them till they turn brown
-Then add all the vegetables except capsicum and tomato fry them for five minute.
-In the last add the capsicum and tomato and fry them for five minutes.
-Then add chicken, fry it and stir for five minutes.

Also taste Kalimirch Chicken

-Add Black pepper and salt and mix it well.
-Add 2 cups of water and close the lid of the Cooker.
-Wait for ten minute and then switch off the flame.
-Garnish with coriander leaves and serve hot with rice or chapattis.

Shahi Toast

(It tasty and quick to prepare dish)

The working hands before or after a hectic day at the workplace may not be in a mood to spend another hour at the kitchen and look for a dish which takes 10 to 15 minutes to be ready besides being tasty and nutritious.  ‘Shahi Toast’ may be the best choice.  It is tasty and easy to prepare. It can be served either for breakfast or as a dessert.

Ingredients:
-500 ml basundi
-4 Slices of bread
-Butter or ghee
Recipe:
-Deep fry the bread pieces in butter or ghee.  Dip in basundi.
-Garnish with sliced dry fruit and serve hot or cold.
